Brinkmann with AMNS??

Would you think a Brinkmann Smoke'N Grill would work with an AMNS, for small cold smokes such as doing bacon?

Absolutely - it would make cold smoking a breeze. I would recommend getting the AMNPS which can use dust or pellets so in the future if you change smokers you can use the pellets too. 
 
which size would be best though??  would I still need the water tray even though I'm doing cold smoke?
 
I would buy the larger one and no you do not need the water pan unless you want to put ice in it to help keep the chamber cool
