Hello everyone. For the last 2 years I’ve had an a-maze-n pellet smoker in my grill and would occasionally smoke ribs and cheese. Obviously this wasn’t the best method but I love ribs and I enjoyed doing it. I liked it so much I just purchased a Smoke Hollow 38 inch. I’ve been reading tips and advice on how to properly smoke all types of meats on this forum for about 2 weeks now, and I decided to officially join. I’ve made a few of the more highly recommended mods to my smoker (cast iron wood pan, larger water tray, gaskets around the door, and am considering a needle valve as well.) I am well on my way to smoking, but I know I will be needing lots of help along the way, so I just wanted to introduce myself and say thanks for all the advice I’ve already gotten from this forum.

Hope you can achieve and maintain your temps ok with the new smoker.. congratulations.
It will take a few weekends and maybe you will get mad. Hope not. Good luck and have fun. :D

Bear- I’m from western PA, 1 mile from the Ohio border and about an hour north of Pittsburgh in a town called Hermitage. I’m assuming you’re from PA, where are you from.

I'm way on the other end of PA, near Allentown (Macungie), and about 50 miles North of Philly.

Welcome, Josh. So happy you decided to officially join the forum and the smoking meat brotherhood. You will get lots of enjoyment out of practicing, compliments on your Q, and most of all, experience and knowledge. One of the best things about smoking is that even when it doesn't turn out as well as expected, it still tastes good!!
