Good morning everyone.   With the nice weather and beef on sale this week I decided to restock the sliced beef supply.

I picked up the bottom round for $3.99/lb.  and some boneless chuckies for $2.99/lb.   The plan is to smoke the rounds today then refrigerate them overnight and slice on Sunday.



All spog'd up and ready to go.


To satisfy today's craving for smokey goodness I'll be doing some  ABT's    All this stuff was on sale and thought it would make an interesting combination. Time will tell.


Because the sliced beef is for tomorrow, I sent a chuckle for a swim in the slow cooker for tonights eats.

I'll update as things progress.

 I make poppers with them sweet peppers.
 

Roast beef is done.  I pulled it at 137 and will refrigerate until tomorrow.


Poppers are ready to go on.  I ran out of prosciutto and used Bearcarver's Canadian bacon to finish the rest of them.

And there we have it.  Lots of shaved roast beast.   Did I mention that I like sandwiches?   Thanks for having a look.
 
Gonna be some great sandwees! Better make up some of Chef JJ's Smokey Au Jus!
Gonna be yummy for sure.  I've read up on Chef JJ's Au Jus and it's on my smokey goodness list of thing to try.  ( I'm falling behind because the list keeps growing )
