In another thread I posted that I had picked up my new TMG Pits Copperhead offset, but wasn't sure when I could break it in. A friend had asked me about smoking a butt for him for a children's charity event he was helping with so of course I greed to and thought that this would be a great way to try out the new smoker. So I made it happen.


Just a standard rub of salt, pepper, and a rub recipe that I "stole" from chef jimmyj chef jimmyj (Thank you:emoji_grin:).

Got the smoker up to temp, about 275℉, and on it went for the duration.

It was looking kind of lonely so after about 5 hours, I gave it some company. 2 racks of St. Louis ribs for our dinner.

I figured "Why not?" Might as well be a guinea pig, too.


After 3 more hours, time to sauce the ribs and let them roll on.

Butt took about 14 hours to get to 203℉-205℉ so time to pull.

A pan full of pulled pork. Just a very small donation to a great cause that really tugs at my heart..

And yes, the ribs were enjoyed, but no finished pics. Now I think I'm ready for a Memorial Day throw down. Overall, I think the first cook went OK and I'm happy.

Good on you for helping out. I’m not familiar with that smoker but it looks massive. What’s the yellowish sauce in the one rack of ribs?

That's a mustard based sauce that a friend makes that's common in the Carolinas. I have some who like it and some who prefer a red, or ketchup, based sauce so I usually will have both.

The smoker is the 52" Copperhead from The Metal Guys, tmgpits.com, out of Knoxville, TN.

I am definitely in the "red" Lexington style camp

Thank you, chefs. I have been fortunate and blessed in my life so there's no way that I couldn't help out those children even if it was just a very small thing in the grand scheme of life.
