ok this will be my very first boston butt. I am wanting to smoke it up and make pulled pork with it

it is 4 lbs

so any advice on how to prepare it

about how long it should take

and any other tips would be appreciated

this is one of our meats for a memorial bbq on sunday

thanks

jon

Keep it simple. I'd use a rub of salt, pepper, onion, garlic (SPOG). Use a sweet wood, apple, cherry, hickory are all good choices. 4lb is a small butt so it wont take as long. I figure 2.5 hours per pound, but have had them take 3-4 sometimes. Cook it to an IT of 205* for pulling. I'd run your smoker at 250*-265*. Plan on letting it rest 45min-hour in foil prior to pulling it.

Hi Jon.

DS nailed it.  The only thing new I'd add is that for pork, we like a rub with a little sweetness in it.  The rub I've been using most often on butts lately is this one:

Memphis Magic Dust Rub Recipe

Ingredients

3/4 cup firmly packed dark brown sugar

 3/4 cup white sugar

 1/2 cup paprika

 1/4 cup Morton's kosher salt

 1/4 cup garlic powder

 2 tablespoons ground black pepper

 2 tablespoons ground ginger powder

 2 tablespoons onion powder

 2 teaspoons rosemary powder

Yield, makes about 3 cups.

Good luck, and be sure to show and tell us how it turns out!
