What is the best wood to smoke Boston Butt.

Also would like to know the following:

I am smoking 2 butts.  Do i use the combined weight or each individual butts weight.  I have about 20lbs total.

 Thanks in advance

I use hickory & oak for everything!

But that's what is available around here.

You would take the weight of the largest butt & base your time on that.

If you have five 10# butts they would only take as long as one 10# butt.

With the exception of the time it takes the smoker to get back up to temp after adding all that cold meat into it.

So to be safe you would use the time from the largest butt & add another half hour for your 2 butts.
