We have family coming into town this evening, so why not throw 13# of Boston Butt on the smoker at 4:45AM :)  I typically inject, but only used mustard and rub on this one.  Sides will be smoked potato salad and barbeque deviled eggs.  Here is your QView:

Prepped with mustard and rub:


This is 7 hours in battling a plateau at 163.  I had them in the aluminum pan to catch the juice but just pulled the pan to get some bark on the bottom half.  Juice will be reintroduced later.  These have also been spritzed every 30-45 minutes.


Just some EVOO and S&P on the red potatoes.  These will become potato salad later:

Right around Columbus......still stuck in the 160s so we'll see what time dinner is :)

What makes them black like that? Indirect heat from smoking them so long?
 
The potato salad is actually a recipe out of Myron's book only modified by smoking the potatoes for close to 3 hours.

Apple/Pecan mix on this one.  They really do take on quite a bit of smoke, I would typically go with Apple or Cherry but the apple was running low that day.
 
Dang it Briggy, that was one nice lookin meal. 

A full smoker is a happy smoker
