Boneless beef short ribs

I bought the short ribs to smoke. I lightly seasoned and smoked @ 225. I figured I’d go for a 3,2,1 cook. After the 3hr smoke I check temp and we were at 150. I figured ok let’s wrap them. About 2hrs after wrapping I checked and we were at 202deg.
Wow they got away from me. I unwrapped ,put some bbq sauce on them and let them set up for 30min. The flavor and so on is rib like but they’re more like steaks.
I read this cut of meat is more of a rhost cut? Anyway definitely not a favorite, I’m guessing the wife and kids are not going to be impressed.
They shouldn’t really be sold as short ribs in my opinion. Not really what I expected. Very dense cut of meat.

They weren’t done yet. Needed a little higher temp. But if you didn’t like the flavor, well there is that.

I thought you could pull rib meat at 200 for pulled taco 🌮? I don’t know, I think
I learned I’m not a beef short rib guy.
 
Lots of ways to do short ribs. Our most favorite way takes about 8 hours. You can even smoke them for 2 hours first before using the recipe. If you do, adjust the total time. The gravy is to die for.

 
That's oxymoronic!!!! How can a beef rib be boneless, wouldn't that just be beef rib meat?????????
