I just wanted to introduce myself and say hi to everyone. I have done a lot of grilling through the years, but wanted to expand my knowledge and variety of cooking techniques, so here I am. I'm pretty new to smoking meats and have just purchased an Oklahoma Joe Highlander horizontal smoker. I've watched a few videos and read a few articles and have made a few modifications to make it more functional. Now I'm ready to learn how to use it properly and different techniques to make the finished product taste as good as alot of the photos I see. I'll mainly just read articles and posts here, but just wanted to say hello.
