Blueberry Sausage: swing and a miss

I came across this recipe ( http://lpoli.50webs.com/index_files/Link Blueberry.pdf ) and was intrigued.  Curiousity finally got the best of me and I made a batch and served it for breakfast yesterday.  In the past I have added apple to my breakfast sausage so this recipe did not seem so off the wall to me.  I duplicated the recipe exactly with the exception of the cure and phosphates.

While the finished product did not taste bad it was not to my liking as I prefer a more savory taste for breakfast.  I will say that the aroma of this mix was out of this world when making it.  I'll chalk this one up in the swing and miss column.

The cooked links with the slice partnered up with blueberry pancakes.

The cure #1 would have imparted a ham flavor to the links; as the other ingredients complimented this flavor (maple, vanilla, nutmeg and cinnamon) that could be the missing ingredient that would make it a home run instead of a miss.  Without it, you'd be left wanting more because it would just be seasoned pork instead.

The other way towards 'savory' would be to add sage for traditional sausage flavor vs. the sweetening ingredients.

The phosphate increases moisture retention in the mix.

With the cure #1, your links would have turned out a nice pink, like ham.

Thanks pops, one of these days I may try it again sometime with the cure.  I've got a breakfast sausage recipe that I'm very happy with.  I've been considering experimenting with integrating some of the sweet into that recipe.  BTW, love the avatar.

I'm going to keep the maple extract in mind as I too have blood sugar issues.  I usually compensate with a couple extra laps but I like the extract idea.

I just planted two blueberry bushes last week - Any recipe with blueberries has got my attention now, I'll have to try this when the bushes get bigger and I have a good yield.

LOL guys, more computer illiteracy than superglue.  Although supergluing a couple of plates to the wall would drive my wife nuts, I'm filing that idea away for future reference.

Baja, those are some good looking bushes.  I wish the climate here would let me grow some.  As it is my garden is already dead but I do have a few nice looking sun dried tomatoes still on the vine.
