I had time yesterday to do these sticks.

5 pounds eye round ground. Then mixed spices and cure per instructions.

Not sure why. But I had 5 blowouts while stuffing these. This isn't the first time I've done sticks. And didn't do anything different. I'll probably stick with casings from TSM. These are edible collagen.

After 11 hours at 170 degrees. These reached 160 IT. Cooled and put in fridge.

This morning I cut them into bite sized pieces. And of course I had a few pieces. I'm quite pleased with them. They really do have a bloody Mary taste with a nice spicy/peppery punch without being overpowering. The 21mm casing are perfect size for these. This blend required no doctoring. It is good as it is.

Wow, those are some really nice looking stix Steve! I've never tried collagen casings tho I did make some breakfast sausage years back using sheep casings, once was enough for me. RAY
 
Nice looking snack sticks Steve, the flavors sound really good. Could use one in my bloody mary.
 
Man those have a great color and look perfect!! Flavor sounds amazing.
