ok, so a couple of smokes and my probes for my thermometer are mostly black. Does that have a big impact on functionality? How do I clean them without damaging them?

Wipe the cords with clean damp cloth or sponge but don't submerge them. The probe ends you need to keep more clean and sanitized. I use a kitchen sponge that has the scrubbie on the one side with antibacterial cleaner such as Clorox clean-up or Kitchen Cleaner. In fact I use that stuff for much of my kitchen sanitizing duties. But I save money and make my own now than buying it.
 
Rubbing alcohol will take it right off, if it's really thick, use a green scrubbie with the alcohol.
Otherwise a paper towel will do the job.
