Ok I have been teasing the cook for a few and to my excitement it is finally here!!!!!
Started prepping at about 8 am after shoveling the snow off the driveway….. Roasted a couple of beef ribs and sliced the meat in between so I could crest more sear surface area in the convection oven at 375. The. They went in a pot with 2 qts of beef stock, 1.5 Tbsp beef & veg better than bouillon, 6 Tbsp soy, 2 Tbsp Worse then on the stove top to light boil (covered)
Pulled it out of the vac pac at noon today and here is the Black Label Baby!!!
The other side……
The wife and boy were out the other day and saw this black angus choice roast for 5.99/lb….. it will be for French dips this week…….
A close up just to show the difference in the wagyu and choice cut.
Seasoned them up with a blend of kinders buttery steak and the blend……
On they went at 235 on the RT 1250…..
So since din din is a ways off the wife made me a snack roll
Properly portioned…….
Now for the magical snack roll part…..
This will bring a tear to one’s eyes….
Snack money!
…….more to come as the prep continues……
