Smoked my first ever pork loin..5 hours 225 degrees..came out good according to my taste testers but it did have a little bitter taste to me..what is it??!'
 
Pork loin is done at 145 degrees internal ,, its about a 2,- 3 hr smoke usually ...

The bitter taste sounds like creosote to me.

Did you have a lot of thick white smoke?

Had some thick smoke in the beginning ....I think I just left it too long. It was moist but internal was 155 when I pullled them off. I'll try it again next weekend...
