Just spent last week in NOLA and couldn't get enough oysters. Your meal looks SO good. 👍 Makes me want more.....hey, that's my birthday too.

Thank you Brian! Give steamed oysters a try. We basically like them extremely lightly steamed...really only warmed up. Steamed too long and the meat shrivels up to nothing and all the liquid cooks out. If we still have to fight to get them open, then they are about right...
I picked up 3 dozen. I would like to try steaming a dozen. Do just put in a pan with some water? About how long would you say?

Use a pot big enough to hold them all and a colander. When I cook smaller amounts, I use a 12 quart pot and a collapsible colander such as this...

Put maybe ½" of water in the bottom, the colander keeps the oysters out of the water. Cover and steam until your desired doneness, we like them just barely warm...very "rare" as some would say. With heavy steam coming out, this takes about 2-3 minutes. When they start to open slightly, they're starting to get overdone for our tastes. Remove from heat immediately when you reach your preferred doneness. Hope this helps...
