Just picked up a prime rib roast from the butcher. So exited, so I figured I would start the topic. Qview to follow.

Ah, yea, Bearcarver's done some primo beef.

I started reminiscing a bit when I first read this, and remembered what it was like to smoke my first prime rib...it was my birthday smoke, and man, was that ever a great birthday. So, I dug up my first (7-bone whole beef rib) from a couple years ago...very unique recipe, and step-by-step found HERE.

Ooooh, I almost missed this one! I de-boned the whole rib, smoked the ribs for lunch and the ribeye for dinner...fantastic meals from this one...found HERE.

Nothing better than a smoked whole beef rib, IMHO. Enjoy your smoke, and the great eating it will yield!

Had a pic rubbed, pre wrapped, but I somehow lost that one.
This cut of meat is insane, thumb goes right in when your flipping it. So tender!

And to rest. And when it's ready you cut away the bone?
 
I don't know what others do, but I cut along the bones, and set them aside.

Then I slice the meat up.

Then later, when nobody's looking, I pig out on the Ribs----MMMMmmmmm.........

Looking good!  Can't wait to see the money shot!

I trim mine off the bone prior to rub, then tie it back up.  It stays together well that way, and is easier to carve after.  I see yours is tied -- maybe that's what you did too. And like Bear, I set those ribs aside for myself for later!
