My wife's birthday today . So she requested
Burnt ends. So I bought this 7 lb beauty and injected it last nite
With beef stock
This am at 6:30 started the smoker... Here is my mods
Fire bricks inside supporting my horizon convection plate
Now for Jeff's rub on both
sides
Getting my char basket ready for the chimney of hot coals
Set my IQ for 250 and we are off!!!
More when the IT hits 170

You know anytime Im out side with the smell of burning wood and smoke coming out of my pit makes that day good... I'm so hooked!!!
 
So the rest of the brisket was sliced and put in Jeff's bar b q sauce with 1/2 cup of honey
Then put on my propane grill on the cast iron griddle at 400 degrees . So they got nice and carmelized and served them on slider rolls.
Sorta like burnt end sandwich talk about yummy
 
I always cut a chunk off and hide it in the freezer so when I get the urge I can thaw it out and warm it up. Freezes great, not like coming right off the smoker, but around my house it doesn't last  long.
