This morning is off to an early start for me. Having a little get together today for New Year’s Eve. We are planning a little bbq. On the menu: 3 racks of baby back ribs, 1 rack of spare ribs, 1 pork shoulder, smoked Mac and cheese along with corn bread made in a couple of cast iron skillets. Tomorrow for the rose bowl wings and poppers are on the menu along with a few other non smoked goodies like a charcuterie board, and guacamole. Ribs will go on around noon. Dinner at 6-7. I’ll have some more que view as I go but for starters here’s a shot of the Yoder getting warmed up. Did it with the garage cracked because we woke up to a few inches of snow and temps that were a little colder than I expected. This is my first big “weekend” ( don’t work again until 3rd) using the new to me ys640. I also have an a-maze-n pellet tube inside to add some extra smoke. There is a picture of the ribs being seasoned up and one of the fridge ready to go for the next two days. Top rack is bacon that needs to be smoked New Year’s Day forming up a pellicle now. Second shelf is ribs. Bottom shelf is pork butt and about 10lbs of wings oh and the good stuff is top left

The deez nuts rub is good. Sweet with a little salty. It’s Pecan flavored. Here’s a little update just over 3 hours in. Just spritzed with 25/50/25 apple cider vinegar and apple juice and water
