my september throwdown entry. went with seafood since it was out of the ordanary. and so did many others lol.
started it off with a swordfish fillet. grilled the fillet on the grill.
then sauteed some sliced button mushrooms shrimp and minced garlic in skillet with butter with the chopped swordfish.
then added the white alfredo sauce and oregano and cracked black pepper, simmered for 5 min.
rolled in itialian sausage and a bacon weve.
then the appatizer fatties. cut and cleaned garden whole jalapenos. stuffed with sharp chedder and motz string cheese.
they got a thin sausage coating and a mini bacon weve. cut bacon into strips.
the side fattie. fresh asparagus topped with a holandaise sauce.
smoked over oak pellets with my ampts
then wrapped with sweet french bread dough and baked.
the bacon weves were peppered with fresh cracked peppercorns. then the main and mini fatties also were smoked using the ampts with oak pellets.
plated fiji on rotoni alferdo.
