Big bird little birds on the PBC

Had sone extra time today so fired up the PBC with some Cowboy briquettes and a few hickory chunks. Turkey breast took too long to thaw last Sunday so today is the day.

Granddaughter/assistant is here and loves to cook thighs so we're off and cooking. Breast has been on for about 1 1/2 hrs with PBC running 310 ish.
Probing around 160 now and getting ready to pull.
Used Dukes as a binder and Lane's Turkey Time for flavor.
The thighs are coated with Lane's Spellbound.
I put 4 in a bath of Chipotle peppers in Adobe sauce for 4 hrs and they are rubbed down with Lane's Q-Nami.

They turned out pretty tasty Ryan.
Pulled the breast at 160 and wrapped up is foil with a 1/2 stick of butter and a little xtra rub. Let sit for an hr and it was a perfect bite.

No brine or injection as this was mainly an experimental cook on the PBC.
Thighs were good but really couldn't taste the Chipotle peppers.
I'll do a longer brine next go round.

Looks great Keith . I do the same . No brine when testing certain things .
Proper slicing of poultry breast noted .
