That's why I say stock up now. I caught two sales and dropped $150 bucks. Bought about 165lbs. of pork. I'm making enough Buckboard bacon, Back Bacon and Tasso to last the rest of the year. Also making a big 50# batch of boudin and 10~12# of hog head cheese. I already have ~60# of smoked sausage along with 60# of andouille in the freezer. I should be good for a while if prices skyrocket....

I'm pretty lucky in the meat department. I buy my whole pigs from a buddy who raises them, and my beef from another friend who has his own feed lot. I get really good prices from each and just have to take care of the butchering and wrapping. A retired butcher I know does that as a sideline out of his house.

If this happens, then it will be easier for me to justify spending $3.29 for a prime brisket at Costco since the pork butt next to it could be equally priced instead of half priced.

I always love me a good justification.

Umm....beef prices are set to rise as well because of the recent flood...up to 1 million calves (or more; still counting) have been lost in the flood waters from the dam breaks.

I bought 165# of pork this last go around dernek...

The pork sausage and andouille was the leftover pork from venison processing day. I usually make a batch of each in late winter/early spring any how.

Interesting thread, indaswamp. Thanks for posting. Sounds like you've acquired enough pork to last you the rest of the year.

For entertainment, as well as potential (hopeful) financial gain, I trade commodity futures on the side. Most of the time I trade financial futures on the CME, specifically the S&P index futures, but from time to time I dabble in agricultural futures. After to talking to some friends who are professional traders I jumped into lean hog futures in mid-February and closed out my
positions last week. During that period, as you can see in the chart below, the price went from around 53 to 79, an increase of nearly 50%. I'm out of the market for awhile due to an extended travel schedule starting later next week but all indicators point to a continuation of the same trend.
