Picked up some baby back ribs during the week. Smoked them in the Highland instead of my MES. Used hickory logs.
Went with 2-2-1 for the time.
What a tasty dinner.

No. I picked them up from a butcher down the street from me. He lands some good deals every so often. Been going to his market for a couple years now.
 
They sure look good!!
Always wondered how the Berkshire ribs would taste, I’ve had Berkshire bellies for bacon & they were awesome, but after seeing your ribs I may have to try a rack!!
