Let me get this out of the way first ... I suck at grilling. Ok, I feel better now.
I grew up in an area that grilling wasn't used all that much. Instead, we smoked our meats in the ground. Yeah, I grew up in Hawaii.
I moved to the South early in life, and during my first occasion to eat smoked food, I was turned off because it was nothing like what I was used to. Hickory? Mesquite? It always tasted burnt to me, so I stayed away most of my younger years.
I was introduced to a different kind of smoking later on, and I was hooked. I didn't know it then, but what was different is the wood used to smoke was not hickory and mesquite, instead they were using fruit trees. I was sold.
Recently, I was given a smoker as a thank you gift. A 30" Masterbuilt Pro Electric Digital Smoker. The couple that gave it to me said I absolutely had to follow Jeff Philips, so here I am!
I actually smoked my first thing today, and I gotta say, I AM HOOKED!
I had a cheap turkey in the freezer since before Turkey Day. I am a caregiver to my 94 year old mom and she gets free food at times. I got one last Turkey Day and when I cooked it in the oven, IT SUCKED. I was not looking forward to cooking another. So I said to myself, it needs to get out of my freezer, let me use this as an experiment, I felt I wouldn't have lost anything if I had to toss it.
I brined it overnight in just salt/water, dried it and then buttered it and used some Kansas City Rub (that was recommended by the couple). Like I said, not a fan of hickory or mesquite so I searched for what would work with a turkey and settled on peach chips.
