Doing a beer can chicken today. 7.77lb. Brined it last night and rubbed it down this morning. It was in the smoker for about 2 1/2 hrs @ 300ish. I did turn it up right at the end to try to crisp it a bit. Checked the It between the leg and thigh. It's at 165.just wrapped it in foil and going to leave it there for 30 mins. Seems like it finished a bit fast but from what I read chicken doesn't need low and slow. This is my first chicken. Looks delicious so far.
I should have used some mustard. Didn't think about it till I already started.

A lot if times I'll throw the chicken under the broiler for a few minutes when it is done to crisp the skin.
