Beef short ribs!

Found these guys on sale at Walmart for half price so I got them.
I just put salt and black pepper on them and will smoke them for awhile until they get to about 205.
I’m hoping I can get all the marbling to melt away for some yumminess!

Been on about an hour now. Looking good.
Just got my new Lavatools javelin pro duo and love it. So quick and got it for around $50. I see no reason to spend $100 on the popular brand. This one works great if you’re looking for an instant read thermometer. Reads in about 2-3 seconds. Very nice and feels solid.

Took them off.
Tastes pretty good to me. Like the top part of a ribeye.

Well I ate them. Pretty tasty, though I could have let them go a bit higher. Took them off around 170. Fat could have melted out a bit more.
Overall, I would try them again and just let them cook longer.

They look good to me also. I did some a little while ago and took them to around 205+/- they were very good.

Point for sure.
