Beef Short Ribs...

Had some nice looking beef short ribs.. 






I trimmed them up pretty aggressively...





Dusted with SM Peppered Cow... 



2 pound naked fatty



Everyone on the Egg..



Fatty all done... naked... and now in the fridge for tomorrow... 




Ribs after about 4 hours... in the 165 range. 





Took them off the Egg and put them in a dish... Decided to braise them

Everybody in the pool... 



Cooked @ 350 for a couple hours. After about an hour or so I tossed in some mushrooms and put in some baked potatoes. Mashed the potatoes... 


Fork tender...

Did you bake the potatoes in the egg then mash them?
 
Yep, baked then mashed. Makes no sense to me to peel and boil potatoes if I have another heat source going anyway... One less pot to clean.
