So I got this crazy inspiration to go over the top with one of my favorite meals I found for the first time about 20 years ago in a quaint little German restaurant in Fredericksburg, TX. Fredericksburg is a really cool little town about 2 hours west of me and we used to take motorcycle rides out there, stroll the shops, and eat lunch. I found this as the Auslander Restaurant and immediately fell in love with it. An attempt to re-create it was made a few years ago but it fell somewhat short my my expectations. I've learned a bit since then and figured I'd give it another shot...so here we go:
Peppers halved, brushed with EVOO, sprinkled with S&P. Ready for the grill
And we're off!!
Skirt steak defrosted
On to the cutting board, sprinkle with S&P, then add cheese
Peppers all done
Slice peppers and place on top of the cheese
Lightly cook spinach in a couple tablespoons of EVOO and add to steak
I took the easy, sleazy way out with the rice but this was pretty darned good!!
Rouladen rolled up and tied off. Ready for the grill
On the grill. I did 1/4 turn flips with it for an even cook
All done, in the house to rest for a few minutes. Couple of pics
Sliced. This is absolutely beautiful IMHO

The salad is a basic Romaine base with green onions, tomatoes, cucumbers, carrots, and topped with Greek yogurt ranch dressing. The dressing was shared by our good friend John (

). This is what was left over from the previous day when I made Dino ribs and Cole slaw. This was used as dressing for the slaw, which was absolutely out of this world!! By far the best slaw any of us have ever had. Ok...back to the Rouladen. It was nothing short of superb. The grilled steak, the roasted peppers, and who can go wrong with spinach and cheese?? This had beautiful flavors that were perfectly balanced, bright, and just glorious. Next time I may make a rich brown gravy to top it with. I've seen it served with and without gravy and I just wanted to see how this came out without interfering flavors. I was not disappointed in the least but can only wonder if the gravy wouldn't be a fantastic addition. Side note: I'll probably post the Dino rib meal just to showcase the dressing and the slaw. It's just that I recently posted a thread featuring the Dino ribs and don't want to do another post that's somewhat of a duplicate thread.
