Beef ribs question

The ones I did last week took about 6 hours. You can do them like spares 3-2-1 I prefer not to have so much foil time or no foil at all. My family loves beef ribs a little greasy compared to spares but worth the effort they are good.
 
I'm on the same boat here about 6 hours and I use the whole 3-2-1 method.
