Howdy all,

I'm planning on doing some beef ribs this weekend and was wondering which side of the membrane are you? Since I saw Al's "perfect rib", I stopped pulling the membrane off of pork ribs. However, I'm not sure if I should leave it on the beef ribs or not. I'm leaning towards pulling off but just wanted to see other people's opinions.
 
I would pull it off.
There is a secondary membrane on beef ribs that will keep the juices in.
The main one is very chewy & basically inedible.
