My sister in law got me a hi mountain jerky variety pack for Christmas this year, and since we have an abundance of ground beef in the freezer (thanks to a great buy at our local county fair), I thought I’d try a couple flavors out. This and the fact my new jerky mats for the mes 40 just came yesterday.
The kit comes with original, mesquite, hickory, pepper and garlic, and cajun. I’m not a big one on overly spicy and hot, but I do enjoy a little heat, so I decided against the cajun. I mixed up two different batches. One original, one mesquite.
The kit calls for four pounds ground meat per flavor packet, and the cure pack is for all flavors combined, so measured the proper amount out for each.
