I bought these at Wal mart, I am a big fan of these ribs but wal mart has changed them here. Meat seems very minimal. I like a longer lower temp smoke.

-any suggestions are great
 
Minimal meat is the problem with finding good beef ribs.  Make sure you don't overcook as it is very easy to do!
 
Usually I do  3-2-1 with beef ribs.

But since yours are so thin you may want to try 2-2-1.

You really need the foil stage with beef ribs, so don't cut that down.

There are more than one type of beef ribs. It looks like what you have are what they call "shiners". Not a lot of meat, but tasty. You just have to be careful not to over cook them.
