Despite the temps being in the low 20's I had the urge to get out and smoke something. I had a bunch of tree limbs to chop up from a storm a few weeks ago and figured if I have to be out doing that I might as well get something good out of it! My step dad is a meat cutter and his store doesn't sell beef backs to the public but employees get them for next to nothing. I got the ribs you see here for 50 cents. No lie.

Ribs going on around 10:30, seasoned with Cavender's All Purpose Greek Seasoning.

Got that gooood TBS with hickory wood and temp holding steady at 250°

I didn't temp these. Went strictly by probe tender. I pulled them a little before the "knife through butter" point. I like a little chew on these ribs. I also wrapped them for about the last hour of cooking. Pulled after about 4 hours total. I could've gone a little longer I think, but no complaints here.

That Cavender's is really good stuff. Been using it for years. I use it in many recipes. Ribs look tasty!.

How is it on chicken? I might throw some quarters on here in a bit and was thinking about using Cavender's.
 
Great looking ribs there you would have a crisper bark if you don't wrap which I never do.

DJ84, I was admiring the meat on those ribs as I read the price WOW! Around here we pay top dollar for beef bones with very little meat.:) Yours look delicious, I can almost taste those babies from here ! LIKE

Thanks! I normally don't wrap. Or if I do, I unwrap and cook a bit longer. When I unwrapped these they were where I wanted them as far as tenderness goes so I just went ahead and pulled them so they wouldn't get over done.

Thanks! I'm pretty fortunate to have a good connection! I wouldn't go out of my way to buy these but I can't turn them down at that price!

The only way I can get Beef Ribs with that much & more meat on them is to buy the Choice Prime Ribs with bones, and cut the Ribs off myself, so I have to pay what the Roasts cost which is usually between $4.99 and $8.99 a pound.
If I could get them for 50 cents, we'd be eating Beef Ribs about every week!!

The thing I like about them is at that price, they're good practice for a newbie like me. I can experiment with different rubs and methods without worrying if something goes wrong. And when it goes right, there is a delicious reward!

I've been looking and looking for beef backs around here, but I can't find them. Even went to the local butcher to try to special order some and they said they just flat out don't do that.

Is your step-dad hiring?

If it were up to him I'm sure he'd hire you! He's a veteran and his store hasn't been good about hiring quality help.

As far as beef backs go, sounds like you and Bear are in the same boat. And honestly if I didn't have my connection I would be too!
