I was able to fire up the rec tec for a nice rib combo yesterday... I had two packages of cleaned and prepared ribs in the freezer (which as dreamy with no kitchen):
Half rack of baby backs and thee beef ribs off a prime rib. ran them both together at 250 - just over 5 hours later they were so ready. here is a before and after. they both were quite good!

Beautiful job Dave!! Appreciate you not saucing the beef ribs though :emoji_wink: Being in TX, I'm a bit of a purist where beef is concerned and you sir nailed those!! No sauce, no wrap, just seasonings and smoke. Let the meat speak for itself. If you ever decide to move, there's lots of room here for you so come on down sir!!

Nice job. Gotta love those Rec Tec's. I put inkbird in yesterday just to check temp. It held within 1 degree. Went from 225 to 250 and went right up and held than to 275 and same.

A fine looking piece of work there, well done! RAY
