Ok so started slicing.....didn't come out as rare as I had hoped (pulled at 135) so maybe next time I will pull and 132 and let the carryover take it up to 136 or so.  Still the texture and the flavor of this beef is better than ANY deli meat I have purchased.  It is tender and has a pure sirloin flavor.  Thanks for paying attention to my thread.....it makes me feel valuable and loved

Thinly sliced for sammies. 

Again not as pink as I wanted it but overall I am happy with the results.  Flavor, tenderness are all SPOT on!

That's odd though, that I pulled mine at 135*, and it looked a lot more Rare than yours.

  This will definitely be in my smoke rotation.  My lovely wife is jealous because she is all the way in Alabama (being a medical nurse for my sons Competition Drum and Bugle corp) and she can't have any.  Mean ol me is sending her pics too!!!

PadronMan......All of these pictures look SO good you had me craving BEEF !!! It was so bad I had to go by Quiznos and get me a Prime Rib Sammie...... It was NOT nearly as good as yours looks though !

It may look good, but it kind of like the advertised pictures of the food that you order at some restaurants. They always look so good and delicious, but they just never are as good as you expect……….
