Bear sausage

  1. How many have made brat style sausage with bear meat? I am thinking 1 lb pork to 4 lb of bear thoughts?

    MS, I have never done it but the ratio seems good. You'll need fatty pork like butt  and not a loin. Just remember to trim ALL the fat off the bear meat before making the sausage

    I would think 50/50 would be better.

    However why do you want to do that with a Bear???

    My uncle who hunts black bear adds 2 pounds of ground pork butt for every five pounds of ground bear meat for sausage. He does the same ratio for ground burger too.
