I actually have fajitas on the menu for the weekend.... But seen this little 6 pounder and couldn’t resist. ..... should wrap in a tortilla nicely as well as the chicken and beef! B

Hey B we make pulled pork tacos all the time around here! Can’t beat em! I bet it works great in fajitas!

I have a silly question/idea? If you plan on using them for fajita will you rub them down with taco or fajitas seasoning before smoking? Will you go with a pulled or a sliced cooked temp? Inquiring minds want to know!

This silly conference championship is gonna make an alcoholic out of me with all the rain/fog /lightening delays. Ran out of kiwis, went to fresh peach, and now down to the old standby, strawberry daiquiris. If It wasn't for the brain freezes I'd be drooling and babbling already!

Damn them little bity seeds!

B, you sound like a man with the plan. Looking forward to seeing the results.

Howdy Kev. I’ll smoke it to pull. 200+
Savory / spicy rub. No sugar in it.

I had to grip my cart tight this morning doing my early raid at Sam's Club. I saw the Pork Chops, Port Loins, and rolled Shoulder Roasts. It was Sooo hard to keep from crashing into the meat case!
I really love Al pastor! But Carnitas is another favorite.
Next time... I think I'll turn right and let some jump into my cart.
I'm riding along for the duration!

Here you go Kev. Nothing fancy going on here. A quick rub down with some old school Mexican hot sauce . Bit of garlic powder. Followed by my standard rub I use on about everything. A little extra cracked black. Easy stuff... b

Hey B, care to share your rub you use. Always on the hunt for good flavors. If a it’s a secret I get it. Just set the ingredients on the counter and take a pic and post it, you don’t have to say a word LOL

It’s really nothing special....
1/2 cup kosher salt.
1/2 cup course black pepper.
1 TBLS smoked paprika.
1 TSP garlic powder
I use this as a base rub and sometimes add more spices to the meat depending what I am doing. No sugars . B

And we are off! This butt has been lounging in the fridge for a few hours. The smoker has stabilized at 225.... let’s cook this!
