Cut/Chop/Cook is an awesome video.  that guy has a passion.  I wish I enjoyed my job as much as he enjoys his.

I've watched about 3 of them so far and have enjoyed them all.  Of course we're here on SMF because we love BBQ, cooking, smoking and learning how to cook it, so it's only natural that we would love these films.  I felt like this would be a interesting watch for all of us.

The whole hog segment was great.....   That is how you make "Thin Blue Smoke".... Pre burn the wood, no acrid, creosote flavors.... kind of like the flavor of "Pitmaster's Choice Pellets" from Todd....   Dave

WOW!

That Capital Q took me back quite a few years. I've actually eaten barbecue at the Skylight but it was a long time before that dome was added.

In the footage, they scan across a newspaper headline and you can see the top of the head of the writer of the article. His name is Dennis Rogers. He is about my age and was raised on Eastern NC barbecue. He dubbed it "THE HOLY GRUB". He has written at least a couple of books and has some good tales on THG (although he wrote about many things). Dennis and I are about the same age. I lost track of him when I left Raleigh in '92 and don't know if he is still at or not.

If you are ever anywhere in the vicinity of Ayden - or traveling North or South on I95 - it is well worth your while to seek out and find a tray of BBQ with the Joneses.

Thanks for the link Bruno. The fellow who does these films, Joe York, is a solid pro, and in conjunction with the SFA, they put out some great struff.

The only one of this group that I've seen in the past is "Whole Hog". Ate at B.E. Scotts,  the place featured in the film, several times during an brief involuntary stay in the Lexington, TN area a few years ago. That place is the real deal. Look forward to watching the other films. Thanks again.

That was great! The main web site has a lot more videos.  The one on Benton's Cured Bacon and country Ham's is awesome!...  ...JJ
