Second use of the MES30 (gen1) smoker. First time around was pork ribs which came out great (used a good recipe /tips  from this site, thanks SmokinAl). Still having problems the AMAZEN smoker tray stalling so I used the MES built in tray. Used a 50/50 mix of hickory and mesquite. Used a rub I had from last year found on the Internet, #99 rub, seems ok but I want to try others.


Put the rub on and into the frig over night. Then into the smoker at 240 for about  4 hrs.


Love the Maverick 733. Done in about 4 hours. Upped the temp towards the end to crisp the skin up. Came out good. No sauce needed.

I just upped the temp to the max, 275. Not sure if this helped but all during the process I sprayed the birds with "I can't believe its not butter" spray.
