Did my first spatchcock bird and wrapped it up w/ some bacon. I think I will be doing this method from now on, very easy, not as messy and it turned out perfect. Smoked for about 4 hours at 250 deg w/ pecan wood and some lump thrown in. Served it up w/ some wild rice.
 
Looks good, I'm gonna give that ol' spatchcock a go on my next yard bird.. Better than buyin the peices seperate and more convenient that having to carve a cooked one..

Man that looks so good and I haven't yet tried the spatchcocked bird but I have seen alot of them here. I really like your plate of fod too.
