Sorry no Qview, I'm at work.
I start off with 2-3 lbs of Halibut cubed into 1" chunks.
1 medium onion quatered and seperated.
1lb of bacon (I havent't tried thick sliced yet)
Toothpicks
Start with one slice of onion and a chunk of halibut, wrap with 1/2 slice of bacon.
Lay the bacon wrapped goodness on a cookie sheet or similar.
I sprinkle them with a little seasoned salt, and garlic powder.
Smoke at 250-275 until fish is firm. (1-1 1/2 hrs)
Place them under the broiler for a few to crisp up the bacon.
I made this the other night for some friends that were up visiting. No leftovers.
