Bacon wrapped Ginger Scallops

Here is an easy smoke for something different. I made this a couple of times with great reviews. Wrap large sea scollops with a slice of bacon.
Grate some fresh ginger root and mix with melted butter and drizzle on top of the scallops. smoke for 2 hrs and enjoy. Some black pepper goes well with it too.

Heck Skip, wrap scallops with anything, drizzle butter on top and it would be good!
