BACON JAM BRISKET BRIE BURGER

BACON ...jam....brisket....brie...burger..say that five times fast lol! This is a monster sized extra messy delicious Burger. I had planned on putting this on the grill but by the time I got home the storms rolled in and the wind picked up pretty bad. So I used my trusty cast iron as a back up.

The last couple weeks I have not been able to find any ground beef so Monday I decided I would grind a brisket that had been in the freezer for a while now. It was from a case that I had baught and was not a good candidate for the smoker. 18lb so it was a good size one.

And now we have ground beef brisket!

I had made up some bacon jam as well. Shout out to Steve H Steve H This stuff is awesome!

Ok so on to the burger build. Started out with toasting the buns and threw on some home canned jalapenos from our garden last year.

Then I sliced the brie in half. Yup a whole half for each burger!

Then hand formed a couple of patties from the medium/coarse ground brisket. Over 1/2 lb each. 10oz each to be exact. They are monster size!

Give them a flip!

Then top with the brie and a good amount of the bacon jam.

Top with the bun and cover with a lid for just a little while to melt the cheese and steam the bun

And here it is! The monster size bacon jam brisket brie burger! Better grab a few extra napkins and bib for this one!

I had a few fries with it too. Although I could have went without the fries lol!

This thing was awesome! That ground brisket is some of the best ground beef ive ever had! The sweet from the jam and the heat from the peppers was just right. And the creamy brie really topped it off. Thanks for taking a look!

for the bacon jam I went off of Steve H Steve H . Thread for "sweet heat bacon jamb"
I used the ground cayenne pepper that I had on hand.

 
My stomach could never process that much jalapeno at one time but WOW, the rest of that looks so delicious. My mouth is literally watering right now. Great job.

GREAT GAWD I RECKON!! That looks amazing. Heck just the enormity of it is carousel worthy :emoji_astonished: Insofar as Steve's bacon jam, I'll second that one real fast. I may have been the first to make it after he posted the step by step...I did it immediately after he posted it. That stuff is just off the charts amazing!! I'm on my 3rd batch and have used it on everything from beef roasts, pork roasts, steaks, topping a brie with it as an appetizer, and on eggs for breakfast. So many things it can be used for. Also made two other batches for friends.

Thanks Robert ! I remember your thread on the pork loin roast in the cast iron. That thing looked like the juiciest loin I had ever seen! Im gonna make more of that bacon jam ....it sure dont last long. I kept mine on the mild side first so my kids could enjoy it without burning them up lol. Next time I'll do a mild batch for the boys and one with some more heat for myself.
 
Man, that is one tasty lookin burger! Ground brisky makes them taste even better!! Nice CI cook man, we love them that way when the weather is not co operating!

Thank you! I love my cast iron and I love burgers on it. But I also like burgers off the grill. Both are awesome but two completely different animals. I was just a little disappointed not to use the grill. Been chomping at the bit to be outside cooking and its just been hit or miss with the weather.
