Was the Bacon cooked? Any recipe

I am out right now will share when I get home but yes I used the ends i had froze when i made bacon last & cooked them up really low to render all of the fat then coarse chopped & added bacon & grease to the sausage mixed & stuffed.
The cheese was high temp cheddar.
 
I'm really interested in the recipe for the Buffalo chicken! Only tried once before from a recipe I found online and it was terrible. That shot with the Blue cheese is making me salivate! Great job!
 
I cheated on the chicken after exactly what you guys said I kept reading about the recipes not working ou so I found a premixed brat seasoning from a local sausage/restraunt supply store & grabbed some high temp blue cheese from them plus chicken thighs were on sale for 1.49 a lb.

Here is the mix I used I know cheating but it is damn good.

 
This has been my go too Brat recipe since I started making brats last year I typically go a little over a 1/2 lb cheese to 5lb we like em cheesy in our house. This particular batch I ground a 25 lb batch & seasoned it made 5 lbs plain then added 2.5 lbs of cheddar & stuffed about 14 lbs cheddar. For the remaining sausage as far as the amount of bacon, I just used the ends from my last batch of bacon, never measured just eyeballed the bacon to the approximate sausage mixed with cheese ended up being about 9 lbs total I liked the idea of adding the bacon grease in along with the bacon to keep the bacon flavor I was afraid it was going to get lost in the sausage but by rough chopping & adding the grease the flavor is definitely there. Hope thats clear enough.

 
this looks great... I'm interested ... But I'm confused ... the title says "Bacon cheddar & chicken wings"... but in your explanation you say Blue cheese and chicken thighs ... What am I missing ??

Sorry for the confusion what I made is a cheddar bacon brat & a chicken wing sausage using ground chicken thighs that I ground & added high temp blue cheese.???better?
 
That is why I don't make sausages,those look so tasty I could eat myself to death!
 
That looks awesome. I am very interested in the chicken wing blue cheese ones you made. I am new at this. What do you mean by high temp blue cheese? Is that different from the cheese I would pick up at whole foods?

Hey Scott i ground 10 lbs chicken thighs & used a prepackaged brat mixture (pic in previous post) then added the cheese mixed & stuffed. I always poach my sausage till done in a hot water bath just makes it easier to defrost grill & eat.

As far as the cheese goes yes it is different as it wont melt out when cooking. Must sausage making stores stock a variety of high temp cheeses for brats, summer sausage, and sticks.
