I purchased a pig from a local farmer and sent it to a local processor to be made into the usual parts. I was pretty happy with the ham but I found the bacon to be sub-par

(I'm not ready to try my own just yet). I decided it would be a great opportunity to try to make candy bacon like we could get in Wyoming before moving here to Colorado.

I made a simple glaze from maple syrup, cayenne brown sugar and black pepper. I flipped them every 5 minutes and re glazed until brown and crispy.

They turned out amazing! Really labor intensive but worth the time. Make sure you do more then 2 lbs (it's not enough)

Nice!
Looks good from where I'm sitting, mmmm, love me some Pig Candy.
Like!

Believe me I know what you mean about labor intensive, it is very time consuming, a labor of love.
Thus I don't make it often, only holidays and by special request.

Nice looking candy you got there. Would honey work as a substitute for the maple syrup?

Point for sure.
