Started with a 10lb butt
5lbs fat and meat for sausage
5lbs for pork pabil on UDS

By far best breakfast sausage!

Now I need to duplicate and modify..
 
24 hours of sitting (another technique learned here) I pan fried some more. The flavors got better!
4 1lb packs in freezer
1 lb to eat!
