I'm going to smoke 4 racks of baby back ribs for the first time in my masterbuilt 30, on Saturday. I'm doing a basic rub, apple juice in the pan, and apple chips. I keep seeing conflicting information about smoke times. I read some people do 8 hours, some do 5 to 6, and some only 1 to 3 hours. So which is it? Won't 8 hours dry them out? Should i do a 3 2 1 or a 2 2 1? Last time I did a 3 2 1 with boneless country style and they came out soooo dry.
 
For baby backs I'd go with the 2-2-1

I’m with Gary on the 2-2-1 for Baby Backs. They are done and tender (fall of the bone tender) after the 2-2. The last 1 is uncovered again to firm them up a bit and set any sauce if you are using any. For my personal liking that last firming up is usually shortened to 30 to 45 minutes with no sauce.

I like 3-1-& finish on a screaming hot grill.
I smoke mine to an IT of 195, which is what we like here.
For FOTB ribs you would want to go a little higher, 200-205.

I was actually thinking of doing 2 2 hot grill, but don't want to burn them lol.
