I'm going to smoke 4 racks of baby back ribs for the first time in my masterbuilt 30, on Saturday. I'm doing a basic rub, apple juice in the pan, and apple chips. I keep seeing conflicting information about smoke times. I read some people do 8 hours, some do 5 to 6, and some only 1 to 3 hours. So which is it? Won't 8 hours dry them out? Should i do a 3 2 1 or a 2 2 1? Last time I did a 3 2 1 with boneless country style and they came out soooo dry.
