I usually just post up things that are different or haven't seen the light of day for a while. However I decided to let you all know I still smoke the regular items as well. My better half requested ribs last night so who was I to argue.

The local super had Baby backs on sale for $3.99/lb this week(not much of a sale in my eyes), but it was better then the other grocers around the area.

All seasoned up with a few shakes of SPOG.

I used the Kettle again since it was only one rack. Both charcoal baskets full with a chunk of apple wood in each. I lit six coals and placed one on each end and one in the middle. Then I let the Kettle come up to near temp about 240 and began choking down the bottom vent.

Added a couple of potatos to utilize the grate space. I slathered this rack with BBQ sauce since the ribs were made especially for wifey. Normally I would only slather either half the rack or do two one with and one without, but since she hadn't eaten all day I wasn't sure how hungry she'd be.

Off the Kettle after 5 or so hours. Ready to be sliced.

Sliced up and plated.

Still have a few bones leftover that I'll make into a hash for breakfeast. Thanks for taking a peak.

Those are some darn good looking ribs Chris!
Great work!
You just can't beat those kettles!!

Looks great!

What type of sauce?

How long did your taters take?

Iillini40, thanks for the like. The sauce was my wifes favorite KC Masterpeice Original. They were made for her so I o'bayed. The potato's take about 3hrs or so at 250*.

That looks pretty good!!

Thanks Lookn4u they were pretty good.

Great plate Chris. If your wife was satisfied then it was a success :)

George

Thanks George, it's most important to keep the wifey satisfied, and thanks for the like appreciate it.

Great dinner! Hard to beat the ol' standbys.

Can't argue with that logic. It's the perfect item to smoke on a sunny day with pooch by you side. Thanks for the like it's appreciated.

Well don't know about regular cause that looks so goooood, and all I can add is mine never turned out as good as those look to be.

Thanks Kit for the kind words, and I've seen some of your cooks they look great.

Thanks Al for the like and kind words. I'm starting to feel bad for the WSM, because the Kettle has taken over for most of my summer smokes.

Nice smoke ring u got there and good looking plate of food. If I had some sour cream on the sides with the potatoes I’d be happy man

Thanks Moto, I'm not to into the sour cream, but a little cheese and bacon would go along way. Thanks for the like appreciate it.

Those look great Chris! Like!
Hard to beat Baby Backs, taters, and corn.

Or, the pooch's hot doggy breath on your xxxx (fill in the blank)...lol... today it was my knee...lol. I told her, "you know, I don't do that to you when you're eating. Not just because you might bite my face off while you're eating, but because it rude." She didn't care...lol. I told her to "back up" and she closed her mouth, so that's something, right? I'm no dog trainer.

Being able to smoke ribs myself is pretty new to me so, even though it seems like a regular thing for experienced smokers, it's still like "Wow, I can make that!" And, I can't see ever getting tired of them. It's just one of those things that's always right and always good. One of those things you'd rather have over the coolest, most exotic, trendy thing. Just makes you feel like all is right with the world...lol. That is the best food! And, how could anybody get tired of seeing it? It's like a steady stream of comfort.

Skidmark and I have already had that conversation many years ago. He knows if he wants any que he has to stay off to the side of my chair. Allot of times when it's cooler out and I'm not there he'll sit in front of the smoker protecting it - I guess.

My kids are both married and moved on to carve out their own niche in life. I don't get to see them as much as I used to or want to. I always wanted them to get to the next phase in their lives, but once it happened I'd wish they were back at the previous stage. Now I make the best of it trying to perfect upon what I know. I still smoke food for friends and family but I really enjoy watching those new to smoking make that perfect rib or brisket. There's an excitement in their posts that is just magical. Most things I enjoy posting aren't new - they've been around for many a year. I just like to bring them back into the spotlight so some of the newer members can see them, and possibly enjoy making them. Believe me I'm not into the fanciest or trendious foods out there today. I'll take a rack of good ribs, baked potato and corn any day of the week. So it's not that I'm tired of it, I just enjoy watching others especially the newer members do it. Sorry if I'm way off track with this response and it's length.

Chris

Chris your response is not too long and right on target with my feelings and I am sure a lot of other folks.

I don’t post a lot of times when I cook or smoke something. How many posts of Boston Butts for pulled pork do you really want to see.
I enjoy reading what others are doing and occasionally picking up a new idea.

There is no greater feeling than to see a new smoker have success on a smoke and that sense of pride and accomplishment comes through in their post.

Chris those are some great looking ribs and dinner!!!! Like for sure, Something I don't see a lot of but when we do we usually grab a couple for us.

Great looking ribs Chris! Points for sure!

I didn't get to smoke anything over the weekend. Spent it trying to fix the John Deere and drinking some beer. I'm not the most mechanically gifted person so it was fun. But at least I got to throw a couple London broils and a couple baked potatoes on the grill Saturday night. Cant go wrong with that for a damn good easy meal...unless you are my 5 year old daughter who only wants to eat pizza and chicken nuggets
