Got a Masterbuilt Propane Smoker for Christmas and just now have the weather and time to put it together and smoke some meat. Assembled and seasoned this last weekend and smoked two racks of baby racks tonight. Used the 3-2-1 method and it turned out well. Not enough rub though, need to increase the rub. I got a decent smoke ring and a nice smoke flavor.

It was recommended that with this smoker the chip tray needed some modification. There are vents in the tray and that allows the chips to burn too fast and/or flame too much. I did not modify the chip tray for this first session, wanted to see for myself. And yes, those vents need to be filled with foil to keep the flame from direct contact with the chips.

All in all I was very pleased with the smoker and this first experience. This weekend I have three more racks, 1 baby back and 2 St. Louis style and two small six pound briskets. Throw in a Cabernet and Merlot and its shaping up to be a wonderful weekend in Boise!





 
Looks great and if all were happy run the same temps and timing but add more rub...JJ
 
Ribs look great!

3-2-1 is typical for spares but most use 2-2-1 for babybacks - but it sounds and looks like yours turned out great!
