This is just about authentic as you can get minus digging a pit and maple vs pimento. In Jamaica mon they cook directly over the coals but mine was cooked in the mini over coals... 

The other day my cousin brought me back some jerk straight back from the island mon! 

I figured chicken was a good choice for the first dish.  This is just over a 6 lb bird... Here's how the cook went. 

4:45 it went on

6:30 it came off

This quarter just broke off while removing the bird!

Thanks Disco.. Just did the jerk rub only.  This rub didn't have much salt so I lightly salted before adding the rub. If you're not going to be able to smoke over coals at least smoke it hot!  Good luck on the jerk! 
 
Thanks Kat! I'm trying to broaden my horizons in spices. Next will be jerk ribs... If there is such a thing
